The Passenger #03 - Carol Choi, that line between travel and cuisine

In the third episode of the video series, Carol Choi, a new yorker chef who moved to Piedmont, talks about the relationship between traveling and cooking. Travel, indeed, cannot be uninfluential on cuisine

The Passenger of this third episode, is Carol Choi, chef, patissìer, baker between New York and Copenaghen, now apprentice farmer too. Together with her mate Francesco, she opened in 2019 the Rantan farmhouse in Valchiusa, a place where she could experiment with local cuisine, only using the foodstuff grown by themselves.

Travel is meant as an activity allowing people to reach alternative destinations. As cuisine is, according to Carol. An occasion to immerse oneself in different cultures, to get inspired and involved by anything you see and taste, mostly. Cooking means translating all these experiences in several plates, single journeys themselves.

The Passenger - A web series by Infra Journal

The Passenger is a collection of stories. A short logbook of travellers from different backgrounds, allowing us to investigate reality from different yet always incredibly close points of view. The leitmotif is travel, but the overall story is broken up into the many stories that we have collected in this video series, highlighting how movement and place are the harbingers of growth, change, encounters, influences. Life and professional experiences. Lots of stories with different voices, to explore, gain insights, understand and, at times, be inspired.
